  • Veg Enchiladas

Our first recipe is veg enchiladas. As the term depicts, it’s a vegetarian recipe. With this tasty delight, you can relish the deliciousness of classic Mexican food.

Ingredients:

For sauce-

  • Vegetable oil (two teaspoons)
  • Diced onion (one, small)
  • Chopped garlic cloves (two)
  • Ancho chile powder (two teaspoons)
  • Ground cumin (one teaspoon)
  • Cayenne pepper (big pinch)
  • Tomato puree (one can of fifteen ounces)
  • Kosher salt

For topping and filling-

  • Chopped, thawed spinach (a pack of ten ounces)
  • Rinsed and strained beans (a can of fifteen ounces)
  • Four ounces of Cheddar (shredded, one and a half cups)
  • Pepper Jack cheese (shredded, one and a half cups)
  • Sour cream (half cup)
  • Sliced scallions (three)
  • Kosher salt
  • Flour tortillas or six-inch corn (twelve)
  • Lime juice (half lime)

Steps to follow:

  • Preheat your oven to around 350° Fahrenheit.
  • To prepare the sauce, take a big skillet to heat the vegetable oil. Put in some onion. Let the onions get cooked, and stir them frequently. After five minutes, they will likely become translucent and soft.
  • After five minutes, add some garlic, cumin, cayenne, and chile powder, and keep stirring until these spices get toasted. It should take a minute. After this, add tomato puree, two cups of water, and salt (1/2 teaspoon). Simmer them.
  • Make the fluid thinner and looser than marinara sauce. It will take fifteen to twenty minutes to do so. Keep it aside to cool down when the sauce gets thick and reduced.
  • Now, for the filling, squeeze out the moisture of fresh spinach. Put the squeezed spinach and pinto beans in a large bowl. Keep smashing and squeezing it until the beans break slightly.
  • Put half the instructed amount of pepper Jack, Cheddar, scallions, and sour cream. Add salt (1 ¼ teaspoon) and stir it to combine well.
  • Take a baking dish and spread tomato sauce (half cup) over it.
  • Put the tortillas in it, with one side covered with ketchup. Cover the mid-section of each tortilla with the filling (1/4 cup). Roll them up. After rolling the tortillas, shingle them in sections of the baking dish evenly. Sprinkle it accurately with cheese. It is how we will prepare the enchiladas.
  • Cover the stuff with a foil sheet, and bake it till the cheese melts. Uncover it and bake it again for ten minutes.
  • Lastly, to prepare the toppings, whisk lime juice, sour cream, and salt in a tiny bowl. Drizzle the blend over the well-baked enchiladas. Sprinkle the remaining scallions.
